Some range problems announce themselves the moment service starts. A burner won't light. The pilot keeps going out. There's a gas smell and you need to shut down before anything else happens. Others are slower to show up: uneven heat that affects ticket quality before anyone spots the flame issue.
Here's what typically sends a kitchen manager to the phone:
• Pilot light that won't stay lit (usually points to a thermocouple or safety valve)

Should You Repair or Replace a Commercial Range?
The honest answer depends on a few things: the age of the equipment, what's actually failed, how often it's been going down, and what the repair costs relative to what replacement would run.
A range with an isolated issue and under 10 to 12 years on it is generally worth repairing. When the same unit is failing repeatedly, or when the repair cost is approaching 50 percent or more of what a replacement would cost, that math shifts. Ranges that have been heavily used in a high-volume kitchen also age faster than the calendar suggests.
