Before we schedule the installation, we confirm the site is ready. That means checking delivery access, utility connections, and the clearances around the installation footprint. For combi ovens, a drain has to be within a few feet of the unit, and a cold water supply has to be in the right position. Not "close enough." We've seen installs stall for days because neither was confirmed ahead of time.

If your kitchen isn't ready when the oven ships, we can receive and hold the equipment at our Rochester or Albany facility until the site is ready. The unit stays off a construction floor and out of the way until you need it.

Getting a 400-pound combi oven from the loading dock to the cookline takes more planning than most operators expect. Door width, pathway clearance, elevator weight capacity, liftgate availability. We check all of it before install day, not on it.

Startup and commissioning is where everything gets confirmed. The oven runs before we close out the job. We check temperatures, verify burner or element performance, confirm fan function on convection units, and run the steam system on combi ovens. A problem caught at startup costs an hour.     Combi ovens carry more pre-installation requirements than any other oven type. Rational iCombi units and Alto-Shaam combi ovens both need specific water line placement, drain access, and gas or electrical specifications confirmed before the equipment arrives.     Gas ovens and ranges require more than connecting a line to the unit. Supply pressure has to match the manufacturer's specification. After connection, we test for leaks and confirm ignition before startup.

    Conveyor and deck ovens vary by operation. Pizza shops running a conveyor need ventilation clearance confirmed and the system cycled through initial heat runs at startup. Deck ovens in bakery settings carry their own weight and load floor considerations.
